Six kitchen spices, ground fine

- Made in small batches, so it is made often
About
Cumin, fennel, ginger, coriander, carom seeds and asafoetida, roasted separately and ground fine.
The bowl of seeds by the door of a restaurant, moved to the beginning of the day instead of the end of the meal. Every one of these is already in an Indian kitchen; the only thing we do is roast them apart, because they toast at different speeds, and grind them together once they have cooled.
A teaspoon in warm water, stirred rather than dissolved, because it will not dissolve entirely. It smells of a kitchen. Some people take it after a meal and some first thing, and we have never been able to say one is right.
How to use
Warm water rather than hot, and stir it rather than waiting for it to dissolve, because it will not entirely. Some people take it after a meal and some first thing; there is no rule.
- Warm a small glass of water
- Stir in one teaspoon
- Drink it warm
Ingredients
Asafoetida is compounded with a carrier, usually wheat flour. Made in a kitchen that also handles groundnut.
Storage and shelf life
Keep the lid tight, away from heat and light, and use a dry spoon. These are roasted seeds, so the aroma is strongest in the first few months.

What goes in
Everything in Digestive Wellness Blend
-
Cumin
Cuminum cyminum
Dry roasted before grinding, which is what turns the raw seed nutty.
-
Fennel
Foeniculum vulgare
The sweet note in the blend, and the one most people recognize from the bowl by the door of a restaurant.
-
Ginger
Zingiber officinale
Dried rather than fresh. Drying concentrates it and makes it keep.
-
Coriander
Coriandrum sativum
The mildest of the six and the one that carries the others.
-
Carom seeds
Trachyspermum ammi, ajwain
Ajwain. Sharp enough that the quantity is small and deliberate.
-
Asafoetida
Ferula assa-foetida, hing
Compounded hing is resin cut with a carrier, usually wheat flour. The carrier is confirmed with the supplier and declared on the pack.
